

A tasty dinner that provides an excellent source of protein, over half your daily requirement! Served with whole grains and veggies for a well balanced meal.
Ingredients:
2 cups of frozen succotash
1 cup wild rice
1 ¾ cup water
1 package of 85% lean ground turkey
2 tbsp green chilies
⅓ cup diced onion
2 tbsp of olive oil
¼ tsp of salt
⅛ tsp pepper
Serves: 4
Directions:
For patties:
In a medium bowl add in ground turkey, onion, and green chilies. Mix thoroughly with hands. Add olive oil to a pan on medium heat. Separate patty mixture into four parts then form into patties with hands. Add all four patties into the pan on medium heat and cook for about 5 minutes on each side then continue flipping and cooking patties for 5 more minutes. (15 minutes total) or until internal temperature reaches 165 degrees fahrenheit.
For wild rice succotash:
In a medium pot combine rinsed wild rice with water and bring to a boil. Once boiling, reduce to a simmer and cook for 45 minutes. While rice is cooking add succotash to a small pot and cook for about 7 minutes. Once succotash is heated through add it into the wild rice and mix well while continuing to cook. Add butter, salt, and pepper to taste.
