Ingredients:
1 tbsp olive oil
⅜ tsp salt* optional
64 oz vegetable broth
3 cloves garlic
½ onion
5 sticks or ¾ cup chopped celery
3 medium or ¾ cup chopped carrots
1 ¼ cup dry lentils
2 tbsp chopped parsley
2 cups chopped lacinto kale
Directions:
In a large pot, add olive oil, minced garlic, chopped onions, and salt, stir on low heat until garlic and onions are golden. Add in chopped celery and carrots, followed by vegetable broth and allow it to simmer. Next add in rinsed lentils and cook for about 15 minutes. Add in chopped kale and parsley and continue to cook for 30 minutes. Serve with a whole wheat roll or toast and a side salad.
