

This health conscious alternative to regular lasagna is packed with flavor and provides you with a serving of vegetables.
Ingredients:
2 Zucchini
1 tbsp Olive oil
2 Sweet italian chicken or turkey sausage
1 cup of tomato basil marinara sauce
2 tbsp chopped parsley
Pinch of dried oregano
1 Clove garlic
½ Onion
¼ cup part-skim ricotta cheese
½ cup part-skim Mozzarella
1 tbsp grated parmesan cheese
Directions:
Preheat oven to 400 degrees fahrenheit. Cut two zucchini’s in half and take a spoon to scoop out some of the flesh, forming a boat. Finely chop garlic, onion and parsley. Add garlic and onion to a large skillet with olive oil. Cook until onions are translucent. Next add in two sausages without the casing. Add a pinch of oregano and cook for 10 minutes. Add in parsley and marinara sauce. Mix well and cook for another 5 minutes. Next add a layer of marinara mixture into zucchini boats, followed by ricotta cheese, mozzarella cheese, and parmesan cheese. Bake for 25- 30 minutes. Serve with a side of whole wheat buttered pasta or brown rice.
