This recipe provides an excellent source of protein. It has over 25 grams per serving.

Ingredients:

4 eggs

1 tbsp olive oil

½ cup quinoa

1 cup water

½ cup canned black beans

½ avocado

½ tomato

½ cup canned corn

¼ cup shredded cheese

1 tbsp green chilies

Salt and pepper to taste*

Serves: 2

Directions:

In a small pot add 1 cup of water and ½ cup of rinsed quinoa. Bring to a boil, then cover and simmer for about 15 minutes. While your quinoa is cooking, take a microwave safe bowl and add black beans and corn. Microwave for about 1 minute. Next, add olive oil to a pan turn on low heat. Take a small bowl and whisk together eggs and green chilies. Add to the pan and cook for about 5 minutes. Serve into bowls- add in cooked quinoa, bean and corn mixture, eggs, cheese, diced tomato and sliced avocado, Add hot sauce, salt, and pepper to taste optional*
